Cooking instructions : –
Step 1
Soak dosa ud dal, rice, fenugreek seeds, chana dal for 6 to 7 hours and divide it finely.
Allow the batter to ferment for 5 to 7 hours. Then take the flour in a pan, add salt, add a little water and mix. Then when the pan is hot,
grease it with oil, pour the batter on it and spread it. And when the edges turn golden, take it out.
Step 2
Chutney:- Add coconut slices, salt, sugar, green chillies, coriander, ginger, dal and water and mix finely in a mixer.
Chutney Tadka:- When the oil heats up, add mustard seeds, then add curry leaves and add the tadka to the chutney, and let the chutney thicken.
Step 3
Vegetables:- Add oil in a pan, add mustard seeds, then add asafoetida, turmeric, curry leaves, urad dal, ginger,
add saute, add onion, green chillies, saute onion, then add potatoes, salt. Add and stir, add coriander and mix.
Step 4
Sambar:- Add oil in a pan, add mustard, hing, turmeric, curry leaves, garlic slices, onion,
tomato and saute the khamang, and add cooked toor dal, salt, sambar masala, jaggery, red chilli and turn off the heat.
Today I didn’t get milk gourd, red gourd, fenugreek pods.
Otherwise it makes the sambar taste more palatable.

Salt to taste
2 tablespoons of oil
1 tsp mustard
1/2 tsp turmeric
1/4 hing
7- 8 curry leaves
7-8 cloves of garlic
1.5 tsp red chillies
1.5 tsp sambar masala
1 tsp jaggery
Water as needed
